Hainanese Chicken Rice
(ciri khas nya singapur, duh jadi kangen)

1 (2-pound) chicken
1 scallion, cut into 1 inch pieces
4 slices fresh, peeled ginger
6 tbsp vegetable oil or chicken oil rendered from chicken fat
6 to 8 cloves garlic, finely chopped
4 cups long-grain uncooked rice, washed and drained
1 tsp fine salt

Mix together for Chilli Sauce
2 to 3 tbsp freshly squeezed lime or lemon juice, 5 tbsp finely chopped fresh red chilies, 5 cloves garlic, chopped, 3 tbsp finely chopped ginger, 1 tsp fine salt, 1/2 cup boiling hot chicken soup

Method
Boil a large pot of water. Stuff the cavity of the chicken with scallion and ginger. Add chicken to boiling water, breast side-down. Lower the heat to a simmer just under boiling point and cook, covered until just cooked through, about 40 minutes. Bathe the chicken in an ice water bath till chicken is cold to create a tender, springy texture. Heat oil in a rice cooker, add garlic, stir fry till fragrant. Add uncooked rice, stir fry for two minutes, add salt and enough chicken soup to cover 1/2 inch above the top of the rice. Boil on high heat, lower heat when steam holes form, cover and steam for 30 minutes till rice is cooked. Chop chicken and serve with steaming hot rice and chilli sauce. Dark soya sauce is the ideal accompaniment.

Nasi Campur Hainan
(duh demen banget ama ini)

Ingredients:
Nasi :
2 sdm minyak sayur
1/2 sdt minyak wijen
3 siung bawang putih, cincang halus
500 g beras pulen, cuci, tiriskan
1 liter kaldu ayam

1/2 sdt merica bubuk

Bahan ayam hainan :
3 sdm minyak goreng
1 sdm minyak wijen
2 siung bawang putih, memarkan
3 cm jahe, memarkan
1 sdt garam
½ sdt merica bubuk
1 ekor ayam, belah 2 bagian
1500 ml kaldu ayam
1 batang daun bawang, potong-potong

Saus, aduk rata:
1 sdt jahe parut
1 sdt bawang putih parut
4 sdm kecap asin

Pelengkap:
Daun ketumbar
Ketimun
Tomat

Directions:
Nasi :
1.Panaskan minyak dan minyak wijen. Tumis bawang putih hingga kuning dan harum.
2.Masukkan beras, aduk hingga rata. Tuangi kaldu, masukkan bumbu. Masak hingga airnya habis terhisap oleh beras. Angkat.

Ayam :
1. Panaskan minyak goreng bersama minyak wijen, tumis bawang putih hingga harum. Masukkan ayam, air, jahe, garam, merica dan daun bawang. Masak hingga ayam lunak, angkat. Biarkan agak dingin. Potong-potong sesuai selera.
2. Saring air sisa rebusan untuk kuah.
3 .Sajikan nasi hainan dan potongan ayam hainan, lengapi dengan kuah, irisan mentimun, dan sambal.

wiii... keliatannya kok enak yah... pengen....

niwei, kemarin icha udah ketik panjang lebar resep simple dan cepat ala icha, tapi error.. alhasil icha males ngetik lagi..wakakkakka....

Ini resep Kimchi yang Icha simpan, lupa dapet dari mana. :D yang pasti dapet dari webnya korea.
① Cabbage, radish, peppers, and garlic are among the ingredients used to prepare the filling for kimchi.Thin strips of radishes and scallions, minced garlic and red pepper powder are all mixed together.
② The cabbage is cut in half, salted and placed aside for one night. The following day the cabbage is rinsed well and the excess water is drained away.
③ The cabbage is then ready for the filling. The filling is evenly placed between each leaf of cabbage.
④ In order to keep all of the filling securely in the cabbage, the entire cabbage is wrapped with an outermost leaf and allowed to ferment for about 1 week.
⑤ The fermented kimchi is sliced and placed in a dish for all to enjoy.
